Our first-ever filter roast is a standout expression of meticulous craftsmanship and vibrant terroir.

Grown at 1750m in Acevedo, Huila by the Vergara Brothers at Las Flores Farm, this exceptional Tabi lot bursts with layered notes of blueberry compote, tropical fruit, and strawberry jam.

The cherries were harvested pre-ripe to avoid premature fermentation, then processed through a detailed multi-phase fermentation:

  • 12 hours in grain-pro bags

  • 24 hours of controlled oxidation

  • 48 hours anaerobic fermentation in mucilage only

  • Thermal rinse at 50°C

  • Cold water quench

  • Fully washed and precision dried over 36–40 hours

The result is a beautifully clean, juicy cup with clarity, depth, and sweetness that lingers.
